Awesome Spicy Turkey Chili
Chili is one of my husband’s favorites. Since we are both on the journey to a better lifestyle, I had to find a healthier way of cooking it. It’s a favorite recipe of mine now and you can’t even tell that it’s healthy.
The recipe is as follows: (makes 10 servings – each serving is 8oz or 1 cup)
3lbs of lean ground turkey chili – (I use 93% fat free)
14.5 oz of no salt added diced tomatoes with basil, garlic & oregano
6 oz of no salt added tomato paste with basil, garlic & oregano
15.5 oz of dark red kidney beans (washed and rinsed well)
1 large sweet onion diced
1 large green pepper diced
1 large tbsp chopped garlic
2 tsp cumin
1 tsp red pepper flakes (optional)
1 tbsp sweet red paprika
1 tbsp fine ground chipotle peppers
1 oz. mexican blend cheese
Brown turkey meat in a large pot. Add diced tomatoes, tomato paste, kidney beans, onions, pepper, garlic, cumin, pepper flakes, paprika and chipotle peppers. Mix well and add 4 cups of water. Simmer on medium low for 2 hours adding 1 cup of water every hour. Serve with 1 oz. of Mexican blend cheese on top and enjoy!
